Losing weight doesn’t have to be difficult. In fact, it can be quite simple – and delicious, too! This cucumber smoothie is a great way to start your day, or enjoy as an afternoon snack. It’s made with healthy ingredients that can help with weight loss: cucumber, pineapple, apple, lemon juice, kiwi and green tea.

Why We Love This Cucumber Smoothie Recipe

My hubs and kids are huge cucumber fans – so much so that even in winter we have mini cucumbers in the house for fresh snacking. So, of course it would make sense to whip up some cucumber smoothies for them!

I’m honestly not a huge fan of cucumbers, but when combined with sweet fruits I can tolerate cucumbers in a smoothie, so if you aren’t a huge fan of cucumber don’t despair. This smoothie really is delicious! The sweetness of the pineapple combined with the apple, kiwi and lemon juice really is wonderful.

Cucumbers are a great source of water and fiber. They’re also low in calories, making them a perfect food for weight loss. Cucumbers can help to flush out toxins and excess water from your body, helping you to lose weight and feel great.

We regularly buy fresh cucumbers and the only thing we do to them before tossing them in the blender is to cut off the ends (my oldest is weird about the ends, but the others eat them…). You can use mini cucumber, English cucumber or regular cucumber.

Most any blender can make short work of a cucumber.


Pineapple

When buying pineapple, look for one that is ripe but not overripe. You want the pineapple to be sweet, but not too sweet. I’ve always been told to pluck a leaf from the center – if it comes out easily it’s ready.

You can also use frozen pineapple chunks if fresh pineapples aren’t in season or if you don’t want to cut up a fresh pineapple (which, I’ll be honest, is me sometimes!).

I prefer to use green apples in my smoothies as they add a nice tartness that balances out the sweetness of the other fruits, but definitely feel free to choose any type of apple you like. I always have Pink Lady apples in the house for fresh eating, and I’ll use one of those if I don’t have green apples on hand. They are definitely sweeter, and still delicious.


Lemon Juice

I always have fresh lemons on hand, but you could also use bottled lemon juice if you prefer. I would start with 1 tablespoon and then add more to taste if needed. Be aware, though, that lemon juice loses a lot of its vitamin C when heated, so fresh is best if possible, but you will still get vitamin C in the pinapple and kiwi so it’s not a huge deal.

You can also use lime juice.


Kiwi

Kiwis are a great source of Vitamin C, fiber and antioxidants. They’re also low in calories, making them perfect for weight loss.

Kiwis add a lovely sweetness to this smoothie, as well as a beautiful green color. I always have fresh kiwis on hand, but you could also use frozen kiwi chunks if you prefer.


Green Tea

Green tea is a great source of antioxidants and has been shown to boost metabolism and help burn fat. It’s also a great source of caffeine, which can help to increase energy levels and improve focus.

It’s up to you what kind of green tea to use – loose leaf, tea bag or even matcha. Just make sure you are using brewed tea that has been cooled.

You could also use pineapple juice, coconut water or filtered water in place of the green tea.


How to Blend a Cucumber Smoothie

First you will need to prep your fruit. You can do this the day before if desired. Simply peel your kiwi, core your apple and cut up your pineapple (or use frozen). If your blender is small you might have to cut the cucumber to get it in as well as the apple. If you have a high powered blender you can put larger chunks inside without issue.

Blending this green smoothie couldn’t be easier! Simply add all of your ingredients to the blender and blend until smooth. If you like your smoothies thinner, add more liquid (water, pineapple juice or green tea) until it reaches the desired consistency.

How to Customize This Kiwi Cucumber Smoothie Recipe

Make it greener: Add in a handful of leafy greens such as spinach or kale for a ton of nutrients in a low calorie package. Leafy greens are especially good sources of folate and vitamin K. You could also add in a scoop of supergreens powder.

Make it sweeter: If you find this smoothie too tart for your taste, add in a ripe banana or mango. You could also use a bit of honey, maple syrup, agave nectar or even stevia or monk fruit sweeteners.

Make it creamier: Add in a scoop of Greek yogurt or some coconut milk or almond milk for a thicker consistency. You could also add oats or frozen fruit for texture.

Make it more filling: Add in a handful of nuts, oats or seeds such as chia seed, flax seed or hemp hearts. You could also add in a scoop of protein powder or nut butter such as almond butter or peanut butter.

Make it more flavorful: Add in a pinch of cinnamon, nutmeg or ginger for an extra boost of flavor.

There really is no limit to the customizations! That’s one of my favorite things about smoothies.
